The new star of South African vineyards, Duncan Savage learned his trade at one of the country's greats, Cape Point Vineyards, before launching his own business in 2011, to which he devotes himself full time. A connoisseur of the Western Cape vineyard, he has built a very high-level range by relying on his good taste and his expertise in local terroirs, with a predilection for maritime and high-altitude vineyards. "I make wine because I love it. I don't come from a family in the wine world, but I found what I'm here for!": this is the profession of faith of a genuine enthusiast, with a sharp palate, whose only credo is the freshness of the fruit and respect for origins. "It's so gratifying to see the results of so many variables unfold in a glass." The critics have praised it and placed it at the top of the South African hierarchy, and its range happily explores the terroirs of Swellendam, Stellenbosch, Paarl, Darling and Olifant Rover through unique, intense wines, but vinified gently and very much in tune with the times.

 

This cuvée (literally translated as "A thief in the night") is made from Grenache from the heights of Piekenierskloof in the same plot as Eben Sadie's famous Soldaat cuvée . The vines grow on decomposed sandstone soils and are cultivated without irrigation. After manual harvesting, the wine ferments spontaneously from indigenous yeasts using 20% ​​whole bunches. The wine is then aged for 10 months in tuns. There are no chemical inputs used apart from a small dose of sulphur. This wine reveals notes of dried rose petals, red berries, gariguette strawberries, red plum, pomegranate, dried thyme, white pepper and sweet spices. On the palate, one feels the combination of an impressive concentration, with smooth tannins and a crisp freshness that stimulates the palate.

This region is influenced by both the oceans and the mountains and there are many micro-climates. The climate is Mediterranean and the influence of the oceans is more pronounced near the coast but the interior of the region is warmer.

The first vines were planted in South Africa by Dutch settlers in the 1650s, although wine production did not really begin to take off until the arrival of French Protestants, in the 1680s, with their skills and their knowledge of viticulture. Stellenbosch is also a historic wine region, with the first vineyards being planted there in the 1690s. Today South Africa is one of the most important wine producing countries in the southern hemisphere. With over 300 years of winemaking history, it is often described as a bridge between the Old and New Worlds. The majority of wines are produced using New World winemaking techniques, but they often have more in common stylistically with their Old World counterparts. Since the end of apartheid, South African wine has received international attention and acclaim for its wide variety of styles. South Africa's wine industry is spread across the lush and rugged landscape of the Western Cape. Here, the abundance of mountains, valleys and plateaus allows winemakers to produce a wide variety of styles. Vineyards can also be found in the Orange River region of the Northern Cape, where the flat, arid landscape is dominated by the Kalahari Desert. Most of South Africa's wine regions have a Mediterranean climate, strongly influenced by the meeting of the Atlantic and Indian Oceans. The country's signature grape variety is Pinotage, an indigenous cross of Pinot Noir and Cinsaut that is rarely found in quantity in other wine-producing countries. Shiraz (Syrah) is also widely planted, as are Cabernet Sauvignon and Merlot (often combined in a Bordeaux blend). South African Chardonnay, Chenin and Sauvignon Blanc have become popular internationally in recent years.
